OUR FAVOURITE SEASONS AT STEDSANS

When is the best time to visit is all about what you like?

  • SPRING
This is a magical time when usually the leaves turn green a few days before our first guests arrive. It’s like after a long winter the forest gives a sigh of relief saying ‘okay, let’s play’. The days are already quite long, but the nights might get cold. The gardens are not that far, but we have an abundance of wild foods to play with, like birch sap, fir shots and wood sorrel + also all the cabbage sprouts and the first rhubarb and asparagus. Spring is the time of rebirth and romance - a clean slate for anything to happen.

  • EARLY SUMMER
In June is when the gardens start to wake up and the sun really starts to warm. The days are the longest, culminating on the 21st and with midsummer. These endless days that don’t ever get really dark is another magical time in the forest. Also, the lake will at this time usually be warm enough for a longer swim.

  • HIGH SUMMER
July and August, sometimes all the way into September is when our gardens are really taking off and showing the abundance they offer. Crops with lots of juices and colours like tomatoes, chantarelles and carrots hit the menu. For vegetable lovers, this is the best time to visit. Obviously, the chances of getting those long, warm summer nights are also the best at that time.

  • EARLY AUTUMN
For those who love getting cosy in a warm sweater around the fire. The menu will have lots of forest mushrooms and also the wild game season starts around this time. Still, the gardens are overflowing with amazing vegetables, now turning more towards the heavy, nourishing crops - and September is the time when we get the first Apples and the last wild blueberries. September can be warm and delicious or it can be cold and rainy - you never know around here. Last year we had the first night frost in September, but also days warm enough for swimming in the lake and hanging out in the sun. The forest changes its colours, and its moods.

  • OCTOBER-NOVEMBER
You really feel that now the season is coming to an end. It’s dark around the time dinner starts, and it can get cold at night. The growing season is culminating with rare things like quince and nuts. We meet October with lots and lots of candles, burning fires and a hot sauna. The forest looks its very best, showing off all its colours, in October.

  • WINTER

Winter in the forest bring the most magical days of the entire year: The days when the forest is covered in snow and the ice allows us to walk across the lake. We install you with lots of hot water bottles, tea, woolen blankets - and a hot sauna and lots of fires. Snow is not a guarantee, of course, and the days are short while nights are long, but for those who want a true adventure this is it!

ALL SEASONS are gorgeous, all seasons have something special. I am not really able to point to one that is my favourite as I have learned to adjust to the seasons and appreciate whatever they offer. Newness and curiosity in spring, speed and abundance in summer, and slowing down + reflecting in autumn.
