Bookings for our 9th summer season are now - finally! - open

This has been a long time coming. We are - finally!! - ready to take bookings for our 2025 season. After re-dedicating ourselves to Stedsans, we did not want to miss the mark - our offer this season had to be spot on what we wanted to show and create - for ourselves and the world.

After countless adjustments and little tweaks, we are now ready to present Stedsans the best way it has ever been.

The best place to take the love of your life on a date.

The best place to spend a holiday with your kids.

The best place to reconnect with yourself, recharge and find new inspiration.

The real change happened on the inside

After a bit back and forth we ended up not changing much to the concept that our many regular guests already love. The main thing is that we lowered the prices significantly and in turn opened up for bookings every day of the week. We removed a dish or two on some of the meals, and we offer our homemade herbal drinks, infusions and kombuchas in our all-inclusive packages, instead of the wines that are from now on an extra option (while it used to be the default choice).

The big change happened on the inside. We shed the cloak that have been feeling heavier and heavier on our shoulders that we had to meet certain ’fine dining’ standards we never really believed in anyway. So a meal at Stedsans is now 3-4 super delicious, super simple dishes on the top-notch best ingredients from local small-scale producers, our gardens and the wild. It’s just food - and yet, it’s also a glimpse into a life in sync with nature, where no life form is harmed unnecessarily. The way it always was. There will still be lots of flowers adorning the food. There will still be surprising combinations. It will still be the freshest food you ever had, unless you grow your own food already. We actually can’t really say what is taken away other than the fact that we lowered the prices and thereby a bit of the pressure to perform.

So it’s probably more just an inner journey. A feeling of touching the core of what Stedsans is and was always about when all outside expectations is stripped away. A place unlike anywhere else, serving food unlike anything anybody else makes - super simple, fresh, vibrant, colorful, beautiful food with respect for all the life and labor that went into it’s creation. A little glimpse into a simpler, easier, more beautiful world, where well-being and sustainability go hand in all, as all is one. The more we care about the Earth, the more we care about humanity. The more we take care of us, the better we can take care of what sustains us. It really is that simple.

So nothing really changed, yet everything changed. The letting go of what we were told to be in those years when we were talk of town in Copenhagen was the big change for us this summer. When we were the darlings of the food-press and everybody wanted the photo of our restaurant on their instagram profile, we lost parts of our souls, that we have now retrieved. It served us for while to believe in the stories that were told about us, but unbecoming what we’re not is serving us better now.

We fell in love with Stedsans again. And we look SO MUCH forward to this summer season.
