“Stedsans is an off-the-grid forest resort in Southern Sweden with a regenerative farm, restaurant, 12 simple wooden cabins, campsite, floating sauna on the lake, outdoor stage and ceremony space to use year-round. We want our guests to feel the healing powers of nature on mind, body and soul, and to show that luxury, true sustainability and well-being go hand in hand."


 

Clean food

At our dinners, we want our guests to experience our take on a truly sustainable, highly vibrant meal. We call ourselves happitarians meaning that our food is mainly plant-based, but we also serve meat from animals who only had one bad day in their lives. In our view, soil and people need animals to stay healthy.

To keep our kitchen procedures simple, our staff free of stress, and the food warm and vibrant, we try to minimize the variations we have to do for each dish. Therefore we don’t serve fully vegan food. We will, of course, adjust the menu to any allergies. However, due to the remote location of the restaurant, we do not recommend people with severe/fatal food allergies visit us.

The food is very simple. It is made mainly on ingredients from our forest and gardens, with some additional items from local, sustainable farms, dairies, and local fishermen, and fire is our only heat source.

We aim to serve food that is as high in taste, sustainability, freshness, and vibrance as possible. We harvest on the day, and sometimes minutes before serving, to present the excellent ingredients in their best and purest form. Please don't expect highly elaborate food. And don’t expect a written menu - as intuition is an important part of our cooking, we like the freedom to change our mind last minute :-)

The dinner takes place around our communal tables and is served family style.

With the food, we serve natural wines and/or homemade, alcohol-free alternatives made from herbs from our medicinal garden and plants from the forest.


THE CABINS

Our cabins are designed, built, and decorated with a strict less-is-more philosophy. Only the very essentials necessary for a person to feel good are provided: A comfortable king-size bed with organic bed linens and lots of blankets for cold nights.

In our cabins, the surrounding nature is the star of the show. The cabins are built with local natural materials only; local slow-growing fir, wood shavings as insulation, and large glass windows to incorporate the surrounding forest and the stars in the sky.

All cabins have their own outdoor compost toilet made in local larch, a type of wood that smells nice. No water is used for the toilets, whereas the sinks run on lake water. All water goes straight back to the forest, and therefore we provide all-natural toiletries that we kindly ask guests to use instead of their own throughout the stay. Once in a while, the compost toilets are emptied and - after a certain process - used as nutrients for non-edible parts of our garden operations.

Things that are good to know:

  • We provide all-natural soaps, shampoo, conditioner, and mosquito oil that we kindly ask you to use instead of your toiletries during your stay. Body oils, toothpaste, and more are for sale on-site. This is important as all water is recycled back to nature, and we want the forest to be a poison-free zone.

  • In the summertime, it doesn’t get really dark in the forest, whereas September to early spring can have very dark nights. We mainly use candles for lighting, but bringing your own flashlight is a good idea.

Stedsans is Danish for ‘sense of place/direction’. We interpret it as something with terroir, using our senses and which direction we need to go as a society. It is founded by Mette Helbæk and Flemming Schiøtt Hansen, two Danish chefs from Copenhagen who felt the call of the wild. We love spending time in nature, we love beautiful, simple things, and we love food!

We created Stedsans as our own playground where we explore natural food, design, and lifestyle and share what we find with our guests. We believe that creating a way of living that respects all forms of life is possible, and we think that connecting with our own inner nature and the natural world surrounding us is a key element in this process. Stedsans is our take on a model for a lifestyle more in sync with the natural rhythms. Where are we located?

 

Halland is a very special place. Located less than 2 h from Gothenburg and 2 h 45 m from central Copenhagen and still a true wilderness with endless forests and huge rivers. It is not uncommon to see moose, wild boars, cranes, or big eagles in the area.
